Pesto Pizza Bagels
I freaking love mini pizza bagels. They're delicious, they're filling, and they're quick to prepare. Frozen pizza bagels: 8 minutes in the microwave. From scratch: about 20 minutes, but totally worth every second!

Pizza bagels are a quick and easy after school snack that you can enjoy even more by making them yourself and choosing your own toppings. Mini whole wheat bagels brushed with garlic butter and covered with melted Asiago cheese are slathered with basil pesto and topped with ripe cherry tomatoes, diced onion, and mozzarella cheese.
Ingredients

- 1 teaspoon cayenne (powder)
Bagel
- 3 bagel (mini bagels, whole wheat)
- 1 tablespoon garlic (crushed)
- 2 tablespoons asiago cheese (shredded)
Bagel (Optional)
- 1 tablespoon butter (salted, room temperature)
Topping
- 1 cup mozarella (shredded)
Topping (Optional)
- 12 cherry tomatoes (red and yellow)
- 1 tablespoon onion (diced)
Sauce
- 3 tablespoons Pesto (basil pesto)
Note
Keeping a jar of pesto in the fridge is a great idea if you're the type who really wants to cook their own meals but don't always have the time. Pesto Pizza Bagels are quick and easy- this recipe is a bit on the fancy side but it's ready in under 20 minutes. Quicker than take out and so much less expensive!
Directions
| Preheat oven to 400 degrees Fahrenheit | |
| Mix butter with crushed garlic | |
| Slice bagels in half | |
| Place bagels cut side down on a cookie sheet and brush them with the garlic butter mixture | |
| Bake bagels for 3-4 minutes until butter is fully melted | |
| Shred some Asiago cheese over the bagels and return to oven for 1-2 minutes or until cheese has melted | |
| Remove the partially toasted bagels from the oven, spread with pesto and add toppings | |
| Sprinkle shredded mozzarella and Asiago over the toppings and top with a dash of cayenne | |
| Return to oven for about 5-7 minutes or until the cheese has fully melted | |
